Honey Lime Cilantro Salmon
This recipe was part of our 2022 Recipe Calendar - it was the month of January.
Do you love Salmon? This one is SOOO flavorfull!
Ingredients:
1 large salmon fillet (we used 2 smaller portions of frozen salmon, thawed)
Salt and pepper to taste (we use Miracle Blend from The Alden Mill in Alden, MI)
1/2 cup unsalted butter, melted
Juice of 2 limes (I did a couple tablespoons of bottled lime juice)
4 tbsp honey
3 tsp minced garlic (we LOVE garlic so we did 3 tbsp instead)
1/2 cup cilantro, roughly chopped (I used dried cilantro)
Instructions:
Preheat oven to 350 degrees F. Line a baking sheet with foil and grease the foil. Lay the salmon on the foil (you can slice fresh lime and put it under the salmon if you like it really limey). Season the salmon with salt and pepper. Stir together butter, lime juice, honey, and garlic. Pour mixture over salmon. Fold the sides of the foil up over the salmon. Bake for 15-20 minutes. Switch oven to broil and cook another 5 minutes. Remove from the foil and sprinkle with cilantro.
NOTE: This can also be used as a marinade. If you choose to use it as a marinade you will simply mix all of the ingredients together and put it into a large zip-lock bag. I like to marinade the salmon for a couple hours. Then we grill it. I personally like this better than the oven method but it depends on how you like your salmon cooked...
