To be honest we got this from a friends cook book (William Strauss with Envoy Mortgage) but the recipe is old and I am not sure where it originated. This is completely disgusting looking and the ingredients sound strange but trust me - this is like a Mexican lasagna and is wonderful! We even did a huge batch of this for a family get together because it is something that everyone can enjoy - even the kids!
INGREDIENTS
1 package of taco seasoning
1 1/2 lb ground beef (we always use the lower fat stuff but it doesn't really matter)
2 cups shredded cheddar cheese (you can always add more cheese!)
1 can of Rotel original
1 can of cream of mushroom soup (we did find a gluten free version at the grocery store)
1 can of milk (use your regular milk just use the can from the Rotel to measure it)
Nacho Cheese Doritos (regular size bag makes the pan size shown in picture)
Brown meat and drain grease. Add taco seasoning. Layer meat, cheese and crushed Doritos two or more times. Mix together Rotel, soup and milk in saucepan and heat til warm. Pour over meat, cheese, and chip layers (this is where the delicious appearance comes from). Bake at 350 for 20-25 minutes. YES IT IS THAT SIMPLE!
