I don't know about you but I LOVE soups! We eat them all of the time and this has become a favorite. It reheats so well and has yummy ingredients. And it is so easy to make with an Instant Pot! Although I am sure you can cook this in a crock pot too. Just not sure of how long it would take.
1 TBS olive oil
1 lb Italian sausage
1 large onion, chopped
4 cloves of minced garlic (we use the squeeze bottle kind)
1 TBS Italian seasoning
1/2 tsp salt
1/2 tsp ground black pepper
1/4 teaspoon red pepper flakes
4 medium potatoes, cubed
4 cups chicken broth
4 cups chopped kale (one bunch is typically plenty)
1 cup half and half
Turn on the multi-fuctional pressure cooker (aka Instant Pot) and select the Saute function. Heat the oil in teh cooker. Add sausage and cook until no longer pink (about 3 minutes). Stir in onion and garlic and cook until softened and translucent. Stir in Italian seasoning, salt, pepper and red pepper flakes. Add potatoes and chicken broth. Close and lock the lid. Select high pressure and set timer for 5 minutes. Note that it may take 10 minutes or so for the pressure to build. Release the pressure with the natural release method. Unlock the lid and stir the kale into the cooker. Change the setting to Saute and cook uncovered for 2 minutes - the kale will cook down. Stir in the half and half. Voila! It is finished!
